Ingredients

  • onions
  • salt and pepper (coarse grind)
  • wine (optional)
  • potatoes
  • flour
  • 2 bay leaves
  • 2 to 3 garlic cloves
  • beef stock or cubes

Instructions

  1. Season the meat with salt and pepper.
  2. Dredge the meat in flour and brown it in a large pot.
  3. Add chopped onions, carrots, potatoes, garlic cloves, and bay leaves.
  4. Pour in wine if using and beef stock or cubes to cover the ingredients.
  5. Add 2 red peppers or 1 fresh jalapeno for spice.
  6. Bring to a simmer, cover, and cook on low heat for several hours until the meat is tender.
  7. Adjust seasoning as needed before serving.
