Ingredients

  • 4 cans beef bouillon
  • 1 stick butter
  • dash of Kitchen Bouquet
  • 1/4 cup sherry
  • 1/2 large can Parmesan cheese, grated

  • 5 medium onions, halved and sliced
  • 2 Tbsp sugar
  • grated Black Diamond cheese or Canadian Cheddar

  1. Saute sliced onions in butter until tender.
  2. Add a dash of Kitchen Bouquet to the onions.
  3. Pour in beef bouillon and water.
  4. Add sugar and grated Parmesan cheese.
  5. Simmer the soup for 1 hour.
  6. Stir in sherry to taste.
  7. Place grated Black Diamond cheese in the bottom of a crock or oven-safe dish, just enough to cover the bottom.
  8. Pour the hot soup over the cheese in the dish.
  9. Add slices of toasted French bread on top of the soup.
  10. Sprinkle more grated Black Diamond cheese over the bread.
  11. Bake in a 500°F oven until the cheese melts and is bubbly, and slightly brown.
