Ingredients

  • 1 lb. ground lean beef
  • 2/3 cup canned milk
  • 1/3 cup Progresso Italian style bread crumbs
  • 1 teaspoon salt
  • 1/4 to 2 teaspoons Worcestershire sauce
  • 1/4 teaspoon pepper
  • dash minced garlic
  • 2 strips bell pepper, chopped fine
  • 3 medium potatoes
  • 3 onions, sliced 1/4 inch thick
  • 3 medium carrots, sliced lengthwise
  • 2 teaspoons dried parsley flakes

Instructions

  1. Mix ground lean beef, canned milk, Italian bread crumbs, salt, Worcestershire sauce, pepper, minced garlic, and chopped bell peppers. Shape into a loaf and place in the center of a 13 x 9 x 2-inch pan.
  2. Peel and slice potatoes, onions, and carrots into lengthwise pieces.
  3. Mix dried parsley flakes, salt, and pepper together.
  4. Arrange the sliced vegetables in layers around the meat loaf in the pan.
  5. Sprinkle each layer of vegetables with part of the salt and herb mixture.
  6. Cover the pan tightly with foil.
  7. Bake in a 375°F (190°C) oven for 1 hour or until vegetables are tender.
  8. Remove the foil and bake for an additional 10 minutes to brown the meat loaf.
