Ingredients

  • 6 c. diced potatoes
  • 1/2 c. chopped onion
  • 3/4 c. melted butter
  • 1 can cream of chicken soup
  • 1 (8 oz.) sour cream
  • 1 c. grated Cheddar cheese
  • 2 c. crushed cornflakes

Instructions

  1. Peel and dice potatoes; place in a bowl of cold, salted water. Drain potatoes and dry on paper towels.
  2. Mix 1/2 cup butter, onions, cream of chicken soup, sour cream, and grated Cheddar cheese; stir well.
  3. Add potatoes to the mixture and pour into a 2 1/2-quart casserole dish.
  4. Crush cornflakes and mix with the remaining melted butter.
  5. Sprinkle the cornflake and butter mixture on top of the potato mixture.
  6. Bake at 350° for 50 minutes.
