Potato-Oatmeal Bread

- Boil the peeled and diced potato in water; drain and place the cooked potato in a large mixing bowl.
- Cool the potato water to 105°F; use ice if necessary to reach this temperature.
- Add yeast and 1 teaspoon of sugar to 1 1/2 cups of potato water and set aside to activate, which takes about 10 minutes.
- Add the buttermilk to the cooked potato and blend well.
- Add oil, molasses, sugar, and salt to the potato mixture and blend thoroughly.
- Add the activated yeast mixture and blend again.
- Add oatmeal and mix well.
- Gradually add flour until the dough forms a soft, but not sticky, ball that can be kneaded.
