Ingredients

  • 1 large potato, peeled and diced
  • 2 cups water
  • 2 packages dry yeast
  • 1 teaspoon sugar
  • 1 1/2 cups potato water
  • 1 1/2 cups buttermilk, at room temperature
  • 1/3 cup oil
  • 1/3 cup molasses
  • 2 tablespoons sugar
  • 2 teaspoons salt

Instructions

  1. Boil the peeled and diced potato in water; drain and place the cooked potato in a large mixing bowl.
  2. Cool the potato water to 105°F; use ice if necessary to reach this temperature.
  3. Add yeast and 1 teaspoon of sugar to 1 1/2 cups of potato water and set aside to activate, which takes about 10 minutes.
  4. Add the buttermilk to the cooked potato and blend well.
  5. Add oil, molasses, sugar, and salt to the potato mixture and blend thoroughly.
  6. Add the activated yeast mixture and blend again.
  7. Add oatmeal and mix well.
  8. Gradually add flour until the dough forms a soft, but not sticky, ball that can be kneaded.
