Potato Parmesan Chowder

Ingredients

  • 3 c. chopped potatoes
  • 1/2 c. chopped onion
  • 2 c. boiling water
  • 1 tsp. salt
  • dash of pepper
  • 2 Tbsp. margarine/butter
  • 2 Tbsp. flour
  • 2 c. milk
  • 1 c. Parmesan cheese
  • 6 crisply cooked bacon slices, crumbled

Instructions

  1. Combine potatoes, onion, water, salt and pepper.
  2. Cover and simmer 15 minutes or until vegetables are tender.
  3. Do not drain. Make a white sauce with margarine, flour and milk.
  4. Add undrained vegetables.
  5. Heat; add cheese and bacon, stirring until cheese is melted.
  6. Makes 6 servings.
  7. This recipe doubles easily.
