Ingredients

  • 2 lb. potatoes, peeled and cut into 1-inch cubes
  • 1/4 cup Italian salad dressing
  • 1/2 cup chopped pimiento, divided
  • 1 cup chopped celery
  • salt and pepper to taste
  • 1/2 cup water
  • 1/4 teaspoon salt
  • 6 large hard-cooked eggs, chopped and divided
  • 1 cup mayonnaise
  • 1/2 cup chopped onion

Instructions

  1. Place potatoes, water, and salt in a 4-quart microproof casserole.
  2. Cover and microwave on High for 8 minutes.
  3. Stir, cover, and microwave on High for another 8 minutes.
  4. Remove from microwave and drain.
  5. Pour salad dressing over potatoes and toss lightly.
  6. Set aside 1/4 cup of chopped eggs for garnish.
  7. Add remaining eggs to the potato mixture and toss lightly.
  8. Set aside 1 tablespoon of pimiento for garnish and add remaining pimiento to the potato mixture.
  9. Blend in mayonnaise, chopped celery, and chopped onion.
  10. Season with salt and pepper to taste.
  11. Spoon into a serving bowl and garnish with reserved egg, pimiento, and parsley.
