Potato Salad(Microwave)
Creamy microwave potato salad with eggs, pimiento, celery, and onion offers a fresh, flavorful side perfect for quick summer gatherings or family meals.

Instructions
- Place potatoes, water, and salt in a 4-quart microproof casserole.
- Cover and microwave on High for 8 minutes.
- Stir, cover, and microwave on High for another 8 minutes.
- Remove from microwave and drain.
- Pour salad dressing over potatoes and toss lightly.
- Set aside 1/4 cup of chopped eggs for garnish.
- Add remaining eggs to the potato mixture and toss lightly.
- Set aside 1 tablespoon of pimiento for garnish and add remaining pimiento to the potato mixture.
- Blend in mayonnaise, chopped celery, and chopped onion.
- Season with salt and pepper to taste.
- Spoon into a serving bowl and garnish with reserved egg, pimiento, and parsley.
