Savory Tomato Quick Bread

Ingredients
- 2 1/2 cups flour ⓘ
- 1 tablespoon baking powder ⓘ
- 1 teaspoon salt ⓘ
- 1 teaspoon garlic salt ⓘ
- 1 teaspoon crushed oregano ⓘ
- 1 tablespoon sugar
- 1/2 cup shredded Mozzarella cheese ⓘ
- 1/4 cup grated Parmesan cheese ⓘ
- 1/3 to 2/3 cup milk ⓘ
- 2 eggs ⓘ
- 1/4 cup oil ⓘ
- 1 1/2 cups peeled, chopped tomatoes, drained ⓘ
Instructions
- Stir together flour, baking powder, salt, garlic salt, crushed oregano, sugar, and cheeses.
- Add enough milk to drained tomato liquid to make 2/3 cup.
- Blend this liquid with eggs and oil.
- Stir the liquid mixture and chopped tomatoes into the flour mixture until thoroughly moistened.
- Pour batter into a greased loaf pan.
- Bake in a preheated 350°F oven for 75 to 80 minutes.
- If the bread is browning before the baking time is complete, cover with a foil tent.
- Cool for 10 minutes in the pan, then turn onto a wire rack to cool thoroughly.
