Ingredients

  • 2 1/2 cups flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon garlic salt
  • 1 teaspoon crushed oregano
  • 1 tablespoon sugar
  • 1/2 cup shredded Mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/3 to 2/3 cup milk
  • 2 eggs
  • 1/4 cup oil
  • 1 1/2 cups peeled, chopped tomatoes, drained

Instructions

  1. Stir together flour, baking powder, salt, garlic salt, crushed oregano, sugar, and cheeses.
  2. Add enough milk to drained tomato liquid to make 2/3 cup.
  3. Blend this liquid with eggs and oil.
  4. Stir the liquid mixture and chopped tomatoes into the flour mixture until thoroughly moistened.
  5. Pour batter into a greased loaf pan.
  6. Bake in a preheated 350°F oven for 75 to 80 minutes.
  7. If the bread is browning before the baking time is complete, cover with a foil tent.
  8. Cool for 10 minutes in the pan, then turn onto a wire rack to cool thoroughly.
