- Cut the potatoes in half lengthwise.
- Bake the potatoes at 350°F (175°C) for 30 minutes.
- Scoop out some of the centers of the potatoes and keep the shells.
- Bake the potato shells for about 15 minutes more.
- Brown the ground beef in a skillet.
- Drain excess oil and add taco seasoning mix according to package instructions.
- Add chopped onions to the beef mixture.
- Fill the potato shells with the beef mixture.
- Top with shredded cheese and bake until the cheese melts.
- Serve with sour cream, taco sauce, or desired toppings.
