Flavorful potato skins filled with seasoned ground beef, topped with cheese and baked to perfection, ideal for a hearty appetizer or snack for gatherings and casual meals.

Ingredients

  • 4 large Idaho baking potatoes
  • 1 lb ground beef
  • 1 package taco seasoning mix
  • 1/2 cup chopped onions
  • shredded cheese

Instructions

  1. Cut the potatoes in half lengthwise.
  2. Bake the potatoes at 350°F (175°C) for 30 minutes.
  3. Scoop out some of the centers of the potatoes and keep the shells.
  4. Bake the potato shells for about 15 minutes more.
  5. Brown the ground beef in a skillet.
  6. Drain excess oil and add taco seasoning mix according to package instructions.
  7. Add chopped onions to the beef mixture.
  8. Fill the potato shells with the beef mixture.
  9. Top with shredded cheese and bake until the cheese melts.
  10. Serve with sour cream, taco sauce, or desired toppings.
