Ingredients

  • 1 1/2 lb. extra lean ground beef
  • 1 cup cornmeal
  • 3/4 teaspoon salt
  • 1/2 cup bacon drippings
  • 1 (17 oz.) can cream-style corn
  • 2 eggs
  • 4 jalapeno peppers, chopped fine
  • 1 medium onion, chopped fine
  • 1 cup grated Cheddar cheese

Instructions

  1. Cook ground beef in a skillet; drain well.
  2. Mix cornmeal, salt, bacon drippings, corn and eggs together.
  3. Pour half of the corn bread mixture into a greased baking dish.
  4. Layer cooked beef, chopped onion, chopped jalapeno peppers, and grated Cheddar cheese over the batter.
  5. Cover with the remaining corn bread mixture.
  6. Bake for 45 to 50 minutes at 350°F until golden and cooked through.
