Tips & Substitutions

For a creamier texture, consider blending part of the soup before adding the cheese. If you're out of beef broth, vegetable broth works well as a substitute. You can also add vegetables like carrots or celery for extra flavor. To enhance the dish, try adding spices such as cumin or paprika, which pair nicely with Mexican recipes.

Serving Suggestions

This potato soup is perfect as a comforting main dish. Serve it with crusty bread or a fresh garden salad for a balanced meal. For a heartier option, pair it with Bruce'S Enchiladas or Deep Fried Burritos. Garnish with extra cheese or chopped herbs for added flavor and presentation.

Storage & Reheating

Store any leftover potato soup in an airtight container in the refrigerator for up to 3 days. When reheating, add a splash of water or milk to loosen the soup, as potatoes can absorb liquid. Heat gently on the stove or in the microwave until warmed through, stirring occasionally.
