Ingredients

  • 2 sticks margarine
  • 2 lb frozen hash browns
  • 1 can cream of mushroom soup
  • 1 pint sour cream
  • 1/4 cup onion, diced
  • 1/2 cup Cheddar cheese
  • 1 stick Ritz crackers

Instructions

  1. Place the frozen hash browns in a 9 x 13 inch baking dish.
  2. Pour melted margarine over the potatoes and diced onion.
  3. In a separate bowl, mix the cream of mushroom soup and sour cream.
  4. Pour the soup and sour cream mixture over the potatoes.
  5. Sprinkle shredded Cheddar cheese over the top to taste.
  6. Crush one stick of Ritz crackers and mix with one stick of melted margarine.
  7. Spread the cracker mixture evenly over the top of the casserole.
  8. Bake at 350°F (175°C) for 1 hour until bubbly and golden.
