Ingredients

  • 2 lb. red potatoes, thinly sliced (about 6 medium)
  • 3/4 tsp. salt
  • 1/2 c. margarine, divided
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 small eggplant, peeled and cubed
  • 1 c. peeled, chopped tomato
  • 1/2 tsp. dried basil
  • 1/2 tsp. dried oregano
  • 1/2 tsp. ground cinnamon
  • 2 Tbsp. all-purpose flour
  • 2 c. milk
  • 1/2 c. grated Parmesan cheese

Instructions

  1. Layer potatoes in a 13 x 9 x 2-inch pan or baking dish. Sprinkle with salt.
  2. Set aside.
