Potatoes Moussaka *
Ingredients
- 2 lb. red potatoes, thinly sliced (about 6 medium) ⓘ
- 3/4 tsp. salt ⓘ
- 1/2 c. margarine, divided ⓘ
- 1 large onion, chopped ⓘ
- 3 cloves garlic, minced ⓘ
- 1 small eggplant, peeled and cubed ⓘ
- 1 c. peeled, chopped tomato ⓘ
- 1/2 tsp. dried basil ⓘ
- 1/2 tsp. dried oregano ⓘ
- 1/2 tsp. ground cinnamon ⓘ
- 2 Tbsp. all-purpose flour ⓘ
- 2 c. milk ⓘ
- 1/2 c. grated Parmesan cheese ⓘ
Instructions
- Layer potatoes in a 13 x 9 x 2-inch pan or baking dish. Sprinkle with salt.
- Set aside.
