Ingredients

  • 4 cups diced potatoes
  • 1 stick butter
  • 1 medium onion chopped
  • 2 large cans chicken broth
  • 2 tablespoons parsley
  • 2 tablespoons minced garlic
  • 1 cup milk
  • 2 tablespoons flour

Instructions

  1. Saute chopped onion in butter in a large stock pot until translucent.
  2. Add chicken broth, diced potatoes, parsley, and minced garlic to the pot and cook until potatoes are tender.
  3. In a separate bowl, make a roux by mixing milk and flour until smooth.
  4. Add the roux to the soup and cook until it thickens to desired consistency.
