Summertime Squash
A comforting summer casserole combining tender squash, savory cheese, and crunchy croutons, perfect for family dinners or potlucks with vibrant flavors and creamy textures.

Instructions
- Boil and drain the sliced squash.
- Mix chopped onion, chopped bell pepper, cream of chicken soup, and sour cream into the squash.
- Melt margarine and add crushed herb croutons to it.
- Combine the squash mixture with half of the grated Cheddar cheese. Season with salt, pepper, and garlic powder to taste.
- Pour the mixture into a casserole dish.
- Top with the remaining cheese. Melt a little more margarine and toss 1 cup of croutons with it, then sprinkle on top of the cheese layer.
- Bake at 350°F (175°C) for 30 to 40 minutes until bubbly and golden.
