Summertime Squash

Ingredients

  • 2 lb. squash, sliced, boiled and drained
  • 1 large onion, chopped fine
  • 1/4 cup bell pepper, chopped fine
  • 1 1/2 cups crushed herb croutons
  • 1 can cream of chicken soup
  • 8 oz. sour cream
  • 8 oz. grated sharp Cheddar cheese

Instructions

  1. Boil and drain the sliced squash.
  2. Mix chopped onion, chopped bell pepper, cream of chicken soup, and sour cream into the squash.
  3. Melt margarine and add crushed herb croutons to it.
  4. Combine the squash mixture with half of the grated Cheddar cheese. Season with salt, pepper, and garlic powder to taste.
  5. Pour the mixture into a casserole dish.
  6. Top with the remaining cheese. Melt a little more margarine and toss 1 cup of croutons with it, then sprinkle on top of the cheese layer.
  7. Bake at 350°F (175°C) for 30 to 40 minutes until bubbly and golden.
