- Place peanut butter chips, semi-sweet chocolate chips, butter, and chopped unsweetened chocolate in a medium saucepan; cook over very low heat until melted, stirring frequently.
- Remove from heat and stir in vanilla extract.
- Gradually stir in cracker crumbs to form a stiff dough.
- Roll the dough into large marble-sized balls.
- Spread crushed pecan meal on waxed paper; roll each bonbon in the meal to coat.
- Optional: press a pecan piece into the top of each ball.
- Let stand on waxed paper for 30 minutes to set.
- Store in an airtight container at room temperature or in the freezer, bringing back to room temperature before serving.
