Ingredients

  • 3 medium onions, chopped
  • 1 large bell pepper, chopped

  • 1 (14 oz) can stewed tomatoes
  • 1 (8 oz) can tomato sauce
  • 1 (6 oz) can tomato paste
  • 1 (3 oz) bottle chili powder
  • 1 tsp cumin
  • 1 Tbsp Tabasco sauce
  • 2 bay leaves
  • 4 lb ground chuck
  • 4 oz beer
  • 2 (8 oz) cans chili beans
  • garlic salt to taste
  • onion salt to taste
  • salt to taste

Instructions

  1. Saute onions, bell pepper, celery, and jalapeno in a small amount of oil.
  2. Add the ground chuck and braise until browned.
  3. Drain excess fat from the meat mixture.
  4. Mix in the stewed tomatoes, tomato sauce, tomato paste, chili powder, cumin, Tabasco sauce, bay leaves, beer, chili beans, garlic salt, onion salt, salt, and pepper.
  5. Add enough water to cover the top of the mixture.
  6. Cook the chili over low heat for three hours, stirring occasionally.
