Ingredients

  • 1 French baguette
  • 4 tsp. olive oil
  • 1 medium yellow onion
  • 1/2 tsp. dried rosemary
  • 1/2 tsp. dried thyme
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 1 (14 1/2 oz.) can tomatoes
  • 2 cloves garlic
  • 2 tomatoes
  • 8 pitted black olives
  • 4 anchovies (optional)

Instructions

  1. Cut the baguette lengthwise, then crosswise into 8 pieces.
  2. Toast the bread under the broiler for about 1 to 2 minutes until golden.
  3. Preheat the oven to 450°F.
  4. In a bowl, combine drained and chopped tomatoes, minced garlic, dried rosemary, dried thyme, salt, and pepper.
  5. Spread the tomato mixture evenly on each toasted baguette piece.
  6. Top with sliced tomatoes, chopped olives, and anchovies if using.
  7. Bake in the preheated oven for about 10 minutes or until toppings are heated through and slightly browned.
