Spinach Pate

Ingredients

  • 3 lb. fresh spinach
  • 1 Tbsp. butter
  • 1/2 onion, minced
  • 2 cloves garlic, minced
  • 1 tsp. thyme
  • 1 tsp. oregano
  • 1 Tbsp. wine or cider vinegar
  • 3 eggs
  • 1/2 c. skim milk
  • 1/8 tsp. nutmeg, grated
  • 4 Tbsp. parsley
  • 1/2 c. Parmesan cheese
  • 1/2 c. Gruyere cheese
  • 3/4 c. whole wheat bread crumbs
  • sea salt
  • pepper

Instructions

  1. Wash and stem the spinach.
  2. Preheat the oven to 350°F.
  3. Butter a loaf pan.
  4. Puree the spinach or chop it finely.
  5. In a skillet, melt the butter and sauté minced onion and garlic until fragrant.
  6. Add thyme and oregano, cook for another minute.
  7. In a mixing bowl, combine the sautéed mixture with vinegar, eggs, milk, grated nutmeg, parsley, Parmesan, Gruyere, bread crumbs, sea salt, and pepper.
  8. Mix thoroughly until well combined.
  9. Transfer the mixture into the prepared loaf pan.
  10. Bake in the preheated oven for about 30 minutes or until set and golden on top.
  11. Remove from oven, let cool slightly, then serve.
