Spinach Pate

Ingredients
- 3 lb. fresh spinach ⓘ
- 1 Tbsp. butter ⓘ
- 1/2 onion, minced ⓘ
- 2 cloves garlic, minced ⓘ
- 1 tsp. thyme ⓘ
- 1 tsp. oregano ⓘ
- 1 Tbsp. wine or cider vinegar
- 3 eggs ⓘ
- 1/2 c. skim milk ⓘ
- 1/8 tsp. nutmeg, grated ⓘ
- 4 Tbsp. parsley ⓘ
- 1/2 c. Parmesan cheese ⓘ
- 1/2 c. Gruyere cheese ⓘ
- 3/4 c. whole wheat bread crumbs ⓘ

Instructions
- Wash and stem the spinach.
- Preheat the oven to 350°F.
- Butter a loaf pan.
- Puree the spinach or chop it finely.
- In a skillet, melt the butter and sauté minced onion and garlic until fragrant.
- Add thyme and oregano, cook for another minute.
- In a mixing bowl, combine the sautéed mixture with vinegar, eggs, milk, grated nutmeg, parsley, Parmesan, Gruyere, bread crumbs, sea salt, and pepper.
- Mix thoroughly until well combined.
- Transfer the mixture into the prepared loaf pan.
- Bake in the preheated oven for about 30 minutes or until set and golden on top.
- Remove from oven, let cool slightly, then serve.
