Provencale Stuffed Tomatoes
Provencale Stuffed Tomatoes features ripe tomatoes filled with a savory mixture of herbs, breadcrumbs, and cheese, perfect for a light, flavorful vegetarian main or side dish.
Ingredients
- 4 medium unpeeled red tomatoes ⓘ
- 3/4 cup chopped onion
- 2 large cloves garlic, minced ⓘ
- 2 tablespoons chopped fresh parsley ⓘ
- 1 teaspoon chopped fresh thyme ⓘ
- 1/4 teaspoon salt ⓘ
- 1/8 teaspoon pepper
- 1/2 cup fine, dry breadcrumbs ⓘ
- 2 tablespoons plus 2 teaspoons grated fresh Parmesan cheese ⓘ
- 1 teaspoon chopped fresh basil ⓘ
- Vegetable cooking spray ⓘ
Instructions
- Cut tops off tomatoes and discard.
- Carefully scoop pulp into a bowl, leaving shells intact.
- Coarsely chop pulp and set aside.
- Saute onion and garlic in a medium nonstick skillet coated with cooking spray.
- Stir in tomato pulp, parsley, thyme, salt, pepper, and basil; saute until moisture evaporates.
- Remove from heat and stir in breadcrumbs.
- Stuff tomato shells with breadcrumb mixture and sprinkle each with 2 teaspoons of grated Parmesan cheese.
- Place stuffed tomatoes in a small baking dish.
- Bake uncovered at 375°F for 15 minutes, or until cheese melts.
