Provencale Stuffed Tomatoes features ripe tomatoes filled with a savory mixture of herbs, breadcrumbs, and cheese, perfect for a light, flavorful vegetarian main or side dish.

Ingredients

  • 4 medium unpeeled red tomatoes
  • 3/4 cup chopped onion
  • 2 large cloves garlic, minced
  • 2 tablespoons chopped fresh parsley
  • 1 teaspoon chopped fresh thyme
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/2 cup fine, dry breadcrumbs
  • 2 tablespoons plus 2 teaspoons grated fresh Parmesan cheese
  • 1 teaspoon chopped fresh basil
  • Vegetable cooking spray

Instructions

  1. Cut tops off tomatoes and discard.
  2. Carefully scoop pulp into a bowl, leaving shells intact.
  3. Coarsely chop pulp and set aside.
  4. Saute onion and garlic in a medium nonstick skillet coated with cooking spray.
  5. Stir in tomato pulp, parsley, thyme, salt, pepper, and basil; saute until moisture evaporates.
  6. Remove from heat and stir in breadcrumbs.
  7. Stuff tomato shells with breadcrumb mixture and sprinkle each with 2 teaspoons of grated Parmesan cheese.
  8. Place stuffed tomatoes in a small baking dish.
  9. Bake uncovered at 375°F for 15 minutes, or until cheese melts.
