Ingredients

  • 3/4 cup uncooked pitted prunes
  • 1 1/2 cups uncooked quick cooking oats
  • 1/2 cup sifted all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 cup brown sugar
  • 1 large egg
  • 1/2 cup soft shortening
  • 1 teaspoon vanilla

Instructions

  1. Snip prunes into small pieces; set aside.
  2. In a mixing bowl, combine the oats, sifted flour, salt, and baking powder.
  3. In a separate bowl, beat the egg and then add the brown sugar, soft shortening, and vanilla, mixing well.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until combined.
  5. Stir in the snipped prunes.
  6. Drop spoonfuls of the batter onto a greased baking sheet.
  7. Bake in a preheated oven at 350°F (175°C) for about 12 minutes or until golden brown.
  8. Remove from oven, cool slightly, and serve.
