  • 3/4 cup sugar
  • 1/4 cup brown sugar
  • 1/2 cup shortening
  • 1 egg
  • 2 teaspoons vanilla
  • 1 cup chopped Brazil nuts
  • solid milk chocolate, candy kisses, or semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large mixer bowl, combine flour, coffee, baking powder, salt, cinnamon, sugar, brown sugar, shortening, egg, and vanilla.
  3. Blend well at low speed until ingredients are mixed thoroughly.
  4. Stir in 1/2 cup chopped Brazil nuts and mix thoroughly.
  5. Chill the dough for easier handling.
  6. Shape the chilled dough into balls, using about a rounded teaspoonful for each.
  7. Place the dough balls on an ungreased cookie sheet.
  8. Bake in the preheated oven for 12 to 15 minutes.
  9. Remove from oven and press a candy kiss or 5 chocolate chips into the center of each hot cookie.
  10. Allow the chocolate to soften, then spread to frost if needed.
  11. Sprinkle the remaining chopped nuts on top of each cookie.

Tips & Substitutions

For a richer flavor, consider using espresso powder instead of regular coffee. If you prefer a nut-free version, you can substitute the Brazil nuts with rolled oats or skip them altogether. To enhance the cookie's texture, try chilling the dough for at least 30 minutes before shaping. Make sure to keep an eye on the cookies while baking, as oven temperatures can vary.

Serving Suggestions
