Ingredients

  • 1 cup margarine
  • 3 cups sugar
  • 4 eggs
  • 2 cups pumpkin (16 oz. can)
  • 3 1/2 cups flour
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 2 teaspoons baking soda
  • 2/3 cup water
  • 1 teaspoon vanilla

Instructions

  1. Melt margarine.
  2. Add and mix in sugar, eggs, and pumpkin.
  3. Sift together flour, salt, cinnamon, nutmeg, and soda.
  4. Add flour mixture to the first mixture, a little at a time, alternately with water and vanilla.
  5. Pour batter into loaf pans.
  6. Bake at 350°F for 50 to 60 minutes.
  7. Allow to cool slightly, then glaze with powdered sugar if desired.
