Ingredients

  • 1 3/4 cups all-purpose flour
  • 3/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 teaspoon baking soda
  • 1 1/2 cups sugar
  • 1 cup canned pumpkin
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1/4 teaspoon pumpkin pie spice
  • 1/3 cup water

Instructions

  1. Grease a 9 x 5 x 3-inch loaf pan.
  2. Preheat the oven to 350°F (175°C). Sift the flour, cinnamon, nutmeg, pumpkin pie spice, salt, and baking soda into a medium bowl.
  3. Beat the sugar, pumpkin, vegetable oil, and eggs in a second medium bowl until well blended.
  4. Stir the dry ingredients into the pumpkin mixture until well mixed.
  5. Pour the batter into the prepared loaf pan.
  6. Bake in the preheated oven for about 50 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow to cool before removing from the pan and slicing.
