Ingredients

  • 2/3 cup shortening
  • 2 2/3 cups sugar
  • 4 eggs
  • 1 (16 oz.) can pumpkin
  • 2/3 cup water
  • 3 1/3 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 2/3 cup chopped nuts
  • 2/3 cup raisins

Instructions

  1. Heat oven to 350°F (175°C).
  2. Grease the bottom only of 2 loaf pans (9 x 5 x 3-inch) or 3 loaf pans (8 1/2 x 4 1/2 x 2 1/2-inch).
  3. Mix shortening and sugar in a large bowl.
  4. Add eggs, pumpkin, and water. Blend well.
  5. In a separate bowl, combine flour, baking soda, salt, baking powder, and cinnamon.
  6. Gradually add dry ingredients to the wet mixture, stirring until just combined.
  7. Fold in chopped nuts and raisins if using.
  8. Pour batter into prepared loaf pans.
  9. Bake until a wooden pick inserted in the center comes out clean, approximately 1 hour and 10 minutes.
  10. Cool slightly before loosening sides of loaves from pans and removing from pans.
  11. Allow to cool completely before slicing.
  12. Wrap tightly for storage.
