Ingredients

  • 2 cups cooked or canned pumpkin
  • 1 cup sugar
  • 1 cup evaporated milk
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 cup flour
  • 2 eggs
  • 1 teaspoon vanilla
  • 1/2 cup oleo
  • cinnamon to taste

Instructions

  1. Melt the oleo in a 2-quart casserole dish.
  2. Combine the cooked or canned pumpkin, sugar, evaporated milk, salt, baking soda, flour, beaten eggs, vanilla, and cinnamon in a bowl.
  3. Pour the mixture over the melted oleo in the casserole dish.
  4. Bake for 1 hour at 350°F or microwave for 12 minutes until set.
  5. Serve hot as a dessert or a side dish.
