Ingredients

  • 4 eggs
  • 2 cups sugar
  • 1 (16 oz.) can pumpkin
  • 1 1/4 cups vegetable oil
  • 3 cups all purpose flour
  • 2 teaspoons baking soda
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon salt
  • 1 (12 oz.) bag semisweet chocolate or butterscotch chips

Instructions

  1. Preheat oven to 400°F.
  2. In a large bowl, combine eggs, sugar, pumpkin, and vegetable oil.
  3. Beat until smooth, then set aside.
  4. In a separate large bowl, sift together flour, baking soda, baking powder, cinnamon, and salt.
  5. Gradually add the flour mixture to the pumpkin mixture, stirring well.
  6. Fold in the chocolate or butterscotch chips.
  7. Fill greased or paper-lined muffin cups three-fourths full with batter.
  8. Bake for 16 to 20 minutes or until the centers bounce back when touched.
