Ingredients

  • 1 can pumpkin
  • 1 c. vegetable oil
  • 2/3 c. water
  • 4 eggs
  • 3 1/2 c. flour
  • 3 c. sugar
  • 2 c. chocolate chips
  • 1 tsp. cinnamon
  • 2 tsp. baking soda
  • 1 1/2 tsp. salt
  • 1 c. pecans

Instructions

  1. In a mixing bowl combine pumpkin, vegetable oil, water, and eggs; mix well.
  2. Add sugar and mix until combined.
  3. Sift together flour, baking soda, and salt in a small bowl.
  4. Add the flour mixture to the pumpkin mixture and stir until just combined.
  5. Stir in cinnamon, chocolate chips, and pecans.
  6. Pour the batter into 3 loaf pans.
  7. Bake at 350°F for 55 to 60 minutes.
