- 1 1/2 cups all-purpose flour ⓘ

- 1 teaspoon baking soda ⓘ
- 1/2 teaspoon salt ⓘ
- 1 (3 1/2 oz.) package coconut cream instant pudding mix ⓘ
- 1/2 teaspoon ground nutmeg ⓘ
- 1/2 teaspoon ground ginger ⓘ
- 1/2 teaspoon ground cinnamon ⓘ
- 1 cup canned or cooked, mashed pumpkin ⓘ
- 1/2 cup chopped pecans (optional) ⓘ
Instructions
- Combine eggs, sugar, and vegetable oil in a large mixing bowl; beat at medium speed of an electric mixer until blended.
- In a separate medium bowl, mix together the all-purpose flour, baking powder, baking soda, salt, coconut cream pudding mix, ground nutmeg, ground ginger, and ground cinnamon.
- Add the flour mixture to the sugar mixture alternately with the mashed pumpkin, beginning and ending with the flour mixture. Mix after each addition.
- Stir in chopped pecans, if desired, and pour the batter into a greased loaf pan.
- Bake in a preheated oven at 350°F (175°C) for approximately 50 minutes or until a toothpick inserted into the center comes out clean.
