Ingredients

  • 1 cup sugar
  • 2 Tbsp cornstarch
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp ginger
  • 1/4 tsp cloves
  • 1/2 tsp salt
  • 1 can milk
  • 1 can pumpkin
  • 2 eggs
  • 1/2 cup pecans
  • 1 baked pie shell

Instructions

  1. Mix dry ingredients: sugar, cornstarch, cinnamon, nutmeg, ginger, cloves, and salt.
  2. Stir in milk, pumpkin, and pecans until well combined.
  3. Cook in a double boiler for 20 minutes, stirring frequently.
  4. Add beaten egg yolks and cook for another 2 minutes.
  5. Cool the mixture and pour into the baked pie shell.
  6. Beat egg whites until stiff peaks form.
  7. Gradually add 1/2 cup sugar to the egg whites and beat until glossy.
  8. Spread the meringue over the cooled pie filling.
  9. Bake at 350°F for 15 minutes until golden brown on top.
