- First, cut 1 cup oleo into 2 cups flour until crumbly. Add 1 cup chopped nuts.
- Press the mixture into a lightly greased 13 x 9-inch pan.
- Bake for 15 minutes at 350°F.
- In a mixing bowl, beat 2 packages of cream cheese with 2 cups powdered sugar and 3 teaspoons vanilla until smooth.
- Fold in 16 oz. thawed Cool Whip.
- In a separate bowl, prepare the vanilla instant pudding with 1 1/3 cups milk according to package instructions.
- Mix the pudding into the cream cheese mixture.
- Add 2 cups pumpkin and blend well.
- Spread the pumpkin mixture over the cooled crust.
- Chill the dessert for at least 2 hours before serving.
