Ingredients

  • 2 c. flour
  • 1 c. oleo
  • 2 c. chopped nuts
  • 2 (8 oz.) pkg. cream cheese
  • 2 c. 10x sugar
  • 3 tsp. vanilla
  • 16 oz. Cool Whip
  • 2 (3 oz.) pkg. vanilla instant pudding
  • 2 c. pumpkin
  • 1 1/3 c. milk

Instructions

  1. First, cut 1 cup oleo into 2 cups flour until crumbly. Add 1 cup chopped nuts.
  2. Press the mixture into a lightly greased 13 x 9-inch pan.
  3. Bake for 15 minutes at 350°F.
  4. In a mixing bowl, beat 2 packages of cream cheese with 2 cups powdered sugar and 3 teaspoons vanilla until smooth.
  5. Fold in 16 oz. thawed Cool Whip.
  6. In a separate bowl, prepare the vanilla instant pudding with 1 1/3 cups milk according to package instructions.
  7. Mix the pudding into the cream cheese mixture.
  8. Add 2 cups pumpkin and blend well.
  9. Spread the pumpkin mixture over the cooled crust.
  10. Chill the dessert for at least 2 hours before serving.
