Ingredients

  • 3/4 cup sugar
  • 1 9-inch layer spice cake
  • 1 16 oz can pumpkin
  • 1 cup light cream
  • 2 eggs
  • 1/2 cup brown sugar
  • 3 to 4 tablespoons light rum
  • 1/2 to 1 cup whipped cream

Instructions

  1. In a pan, melt the granulated sugar, stirring until an even amber color.
  2. Remove from heat and pour quickly into a 9-inch pan to coat the bottom and sides.
  3. Beat the remaining ingredients except whipped cream until well blended.
  4. Pour the mixture into the glazed pie pan.
  5. Place the pie pan in a larger pan of hot water (1/4 to 1/2 inch deep).
  6. Bake about 70 minutes at 350°F.
  7. Allow to cool.
  8. Loosen the sides of the custard with a knife.
  9. Invert the cake on top of the custard, then invert a serving plate on top of the cake.
  10. Turn over all at once to unmold the flan.
  11. Decorate the top of the flan with whipped cream as desired.
