- In a pan, melt the granulated sugar, stirring until an even amber color.
- Remove from heat and pour quickly into a 9-inch pan to coat the bottom and sides.
- Beat the remaining ingredients except whipped cream until well blended.
- Pour the mixture into the glazed pie pan.
- Place the pie pan in a larger pan of hot water (1/4 to 1/2 inch deep).
- Bake about 70 minutes at 350°F.
- Allow to cool.
- Loosen the sides of the custard with a knife.
- Invert the cake on top of the custard, then invert a serving plate on top of the cake.
- Turn over all at once to unmold the flan.
- Decorate the top of the flan with whipped cream as desired.
