Creamy scallop cauliflower bake features tender cauliflower, flavorful mushrooms, and a rich, buttery sauce topped with bread crumbs, perfect for comforting family dinners.

Ingredients

  • 2 lb. cauliflower
  • 2 lb. mushrooms
  • 1 small onion
  • 1 stick butter
  • 6 Tbsp. flour
  • 2 1/2 cups milk
  • 1/2 tsp. salt
  • 1/2 tsp. paprika

Instructions

  1. Cook cauliflower until tender, then break apart and arrange in a greased casserole pan.
  2. Wash mushrooms and simmer them for 30 minutes.
  3. Slice the cooked mushrooms; cook in 1 tablespoon of fat for 3 minutes, turning frequently.
  4. Melt 4 tablespoons of butter in a saucepan.
  5. Add finely chopped onion and cook until tender.
  6. Add flour while stirring constantly until smooth.
  7. Gradually add milk and mushroom liquid, stirring to combine.
  8. Add salt, paprika, and sliced mushrooms to the sauce.
  9. Mix bread crumbs with 2 tablespoons of butter and paprika, then sprinkle over the casserole.
  10. Bake in the oven for 30 minutes until golden.
