Pumpkin Loaf Bread

Ingredients

  • 1 1/2 c. sugar
  • 1 1/2 c. flour
  • 1/4 tsp. baking powder
  • 1 tsp. soda
  • 3/4 tsp. salt
  • 2 eggs
  • 1 tsp. cinnamon
  • 1 tsp. nutmeg
  • 1/2 c. cooking oil
  • 1/2 c. milk
  • 1 c. cooked pumpkin
  • 1/2 c. chopped nuts or raisins

Instructions

  1. Stir together flour, baking powder, soda, salt and spices. Combine pumpkin, sugar, milk, eggs and oil in a bowl.
  2. Beat well; add dry ingredients and mix until well blended.
  3. Stir in nuts and raisins.
  4. Spread in a well-greased loaf pan (9 x 5 x 3-inch). Bake in a preheated 350° oven for 1 hour and 15 minutes.
  5. It is done when it springs back when touched lightly.
  6. Cool 5 minutes, then remove from pan.
