Ingredients

  • 2 cups sugar
  • 1 cup vegetable oil
  • 3 eggs
  • 1 (16 oz.) can pumpkin
  • 3 cups sifted all-purpose flour
  • 1 teaspoon baking soda
  • 3/4 teaspoon baking powder
  • 1 1/2 teaspoons ground cinnamon
  • 3/4 teaspoon ground nutmeg
  • 3/4 teaspoon ground cloves
  • 3/4 teaspoon salt
  • confectioners sugar

Instructions

  1. Blend sugar and vegetable oil well with an electric mixer.
  2. Beat in eggs, one at a time, and continue beating until light.
  3. Add pumpkin; blend thoroughly.
  4. Sift together all-purpose flour, baking soda, baking powder, cinnamon, nutmeg, cloves, and salt into the creamed mixture.
  5. Beat at low speed until blended.
  6. Pour batter into greased loaf pans (either 4 small or 2 larger).
  7. Bake in a moderate oven (350°F) for 1 hour or until lightly browned.
  8. Leave in pans for 10 minutes on a wire rack after baking.
  9. Remove from pans and cool completely on a wire rack.
  10. Sprinkle with confectioners sugar before serving.
