Ingredients

  • 2 cups crushed vanilla wafers
  • 1 cup chopped pecans
  • 3/4 cup butter or margarine, softened
  • 18 oz. spice cake mix
  • 16 oz. can pumpkin
  • 1/4 cup butter or margarine, softened

Instructions

  1. Heat oven to 350°F.
  2. In a large mixer bowl, combine crushed vanilla wafers, chopped pecans, and 3/4 cup butter.
  3. Beat at medium speed, scraping the bowl often, until crumbly, about 1 to 2 minutes.
  4. Press the mixture evenly onto the bottom of three greased and floured 9-inch round cake pans.
  5. In the same bowl, combine spice cake mix, pumpkin, 1/4 cup softened butter, and eggs.
  6. Beat at medium speed, scraping the bowl often, until well mixed, about 2 to 3 minutes.
  7. Spread 1 3/4 cups of batter over the crumb layer in each pan.
  8. Bake for 20 to 25 minutes, or until a wooden pick inserted in the center comes out clean.
  9. Cool for 5 minutes, then remove from pans.
  10. Cool completely before frosting or serving.
