Ingredients

  • 1 box yellow cake mix
  • 1 stick margarine
  • 1 beaten egg
  • 1/2 cup brown sugar
  • 2/3 cup evaporated milk
  • 3 eggs
  • 1 large can pumpkin
  • 1 teaspoon cinnamon
  • 1 cup cake mix
  • 1 cup white sugar

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Prepare the cake batter by mixing the yellow cake mix (excluding 1 cup), beaten egg, and margarine until well combined.
  3. Pour the batter into a greased baking pan and bake for about 25 minutes, or until a toothpick inserted into the center comes out clean.
  4. In a mixing bowl, combine the pumpkin, brown sugar, evaporated milk, eggs, cinnamon, and 1 cup of cake mix to make the pumpkin filling.
  5. Spread the pumpkin filling over the baked cake layer.
  6. Sprinkle the remaining cake mix evenly over the pumpkin layer.
  7. Sprinkle the brown sugar over the top.
  8. Bake at 350°F (175°C) for about 60 minutes, or until a knife inserted into the topping comes out clean.
