Ingredients

  • 2 c. cooked pumpkin
  • 1 1/2 c. brown sugar
  • 1/2 c. butter or oleo
  • 3 eggs
  • 3 c. flour
  • 2 tsp. baking powder
  • 1 1/2 tsp. cinnamon
  • 1/2 tsp. salt
  • 1/2 tsp. nutmeg

Instructions

  1. Mix flour, baking powder, cinnamon, salt, and nutmeg in a bowl.
  2. Stir in roasted, shelled pinons.
  3. In a separate bowl, combine cooked pumpkin, brown sugar, melted butter, and lightly beaten eggs.
  4. Add the flour mixture to the pumpkin mixture, blending thoroughly.
  5. Pour the batter into two greased loaf pans.
  6. Bake at 350°F for about 1 hour.
