Ingredients

  • 1 cup cooking oil
  • 4 eggs lightly beaten
  • 2/3 cup water
  • 2 cups mashed cooked pumpkin
  • 3 1/3 cups presifted flour
  • 3 1/3 teaspoons salt
  • 1 teaspoon nutmeg
  • 2 teaspoons baking soda
  • 1 teaspoon cinnamon
  • 3 cups sugar
  • 1/2 cup chopped pecans
  • 1/2 cup seedless raisins

Instructions

  1. Preheat oven to 350°F.
  2. Grease and flour 3 (8 1/2-inch) loaf pans.
  3. Combine oil, eggs, water, and pumpkin in a mixing bowl.
  4. Sift together dry ingredients in another bowl.
  5. Make a well in the center of dry ingredients and add pumpkin mixture.
  6. Blend just until dry ingredients are moistened.
  7. Stir in chopped pecans and seedless raisins.
  8. Turn batter into prepared pans.
  9. Bake in the preheated oven for about 1 hour.
