Ingredients

  • 3 cups sugar
  • 3 cups flour
  • 3 eggs
  • 2 cups cooked pumpkin
  • 1 cup salad oil
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon or pumpkin pie spice
  • 2 teaspoons baking powder

Instructions

  1. Mix all ingredients together until well combined.
  2. Grease and flour a 9 x 13-inch baking pan or a Bundt pan.
  3. Pour the batter into the prepared pan.
  4. Bake at 350°F (175°C) until done, approximately 30 minutes.
  5. Alternatively, divide the batter into 2 loaf pans and bake accordingly.
  6. Allow to cool before serving.
