Ingredients

  • 1 egg, well beaten
  • 1/2 tsp. salt
  • 3/4 c. sugar
  • 1 1/4 c. flour
  • 1 tsp. baking soda
  • 1 (1 lb.) can fruit cocktail with syrup
  • 1/2 c. brown sugar
  • 1 c. chopped pecans
  • 1/2 c. coconut

Instructions

  1. Blend egg, salt, and sugar together until well combined.
  2. Sift flour with baking soda.
  3. Add the sifted flour and baking soda to the egg mixture and mix thoroughly.
  4. Pour in the can of fruit cocktail with syrup into a greased 9 x 13-inch pan.
  5. Mix the remaining ingredients—brown sugar, chopped pecans, and coconut—and sprinkle evenly on top of the batter.
  6. Bake in a 300°F oven for 1 hour until a toothpick inserted in the center comes out clean.
  7. Allow to cool, then cut into squares and serve with whipped cream.
