Quacker Jacks are a crunchy, sweet and nutty popcorn treat with a rich caramel flavor, perfect for snacking at gatherings or movie nights with friends and family.

Ingredients

  • 1 cup peanuts (without skins)
  • 2 sticks butter or margarine
  • 2 tablespoons butter or margarine
  • 5 quarts popped popcorn
  • 2 cups packed brown sugar
  • 1/2 cup light corn syrup
  • 1 teaspoon salt

Instructions

  1. Preheat oven to 250°F (120°C).
  2. In a large saucepan, melt 2 sticks of butter or margarine over medium heat.
  3. Add brown sugar, light corn syrup, and salt to the melted butter; stir until well combined and bring to a boil.
  4. Boil for 4-5 minutes, stirring constantly.
  5. Remove from heat and stir in baking soda; mixture will foam.
  6. Pour caramel sauce over the popped popcorn and peanuts, mixing well to coat evenly.
  7. Spread the mixture onto a greased baking sheet or large roasting pan.
  8. Bake in the preheated oven for 1 hour, stirring every 15 minutes.
  9. Remove from oven and let cool completely before breaking into pieces.
