Applescotch Crisp
A warm, crunchy apple crisp with a sweet butterscotch topping and toasted coconut, perfect for fall gatherings and comforting desserts for family and friends.
Ingredients
- 3 lb. Georgia apples, peeled, cored and sliced ⓘ
- 1/2 cup margarine ⓘ
- 3/4 cup brown sugar ⓘ
- 1 teaspoon cinnamon ⓘ
- 2 cups all-purpose flour ⓘ
- 2 cups sugar ⓘ
- 1 teaspoon salt
- 2 teaspoons baking powder ⓘ
- 1 cup vegetable oil
- 2 eggs ⓘ
- 3/4 cup flaked coconut ⓘ
- 1 cup chopped pecans ⓘ
- 1/2 cup butterscotch chips ⓘ
Instructions
- Preheat the oven and coat a 9 x 13-inch pan with vegetable cooking spray.
- Spread the peeled, cored, and sliced apples in the bottom of the pan and dot with margarine.
- Combine brown sugar and cinnamon, then sprinkle over the apples.
- In a large bowl, sift together flour, sugar, salt, and baking powder.
- Add vegetable oil and eggs to the dry ingredients, mixing by hand until smooth; the batter will be thick.
- Pour the batter evenly over the apples in the pan.
- Sprinkle flaked coconut, chopped pecans, and butterscotch chips evenly over the top.
- Bake until the topping is golden brown and the apples are tender, about 45 minutes.
