Ingredients

  • 3 lb. Georgia apples, peeled, cored and sliced
  • 1/2 cup margarine
  • 3/4 cup brown sugar
  • 1 teaspoon cinnamon
  • 2 cups all-purpose flour
  • 2 cups sugar
  • 1 teaspoon salt
  • 2 teaspoons baking powder
  • 1 cup vegetable oil
  • 2 eggs
  • 3/4 cup flaked coconut
  • 1 cup chopped pecans
  • 1/2 cup butterscotch chips

Instructions

  1. Preheat the oven and coat a 9 x 13-inch pan with vegetable cooking spray.
  2. Spread the peeled, cored, and sliced apples in the bottom of the pan and dot with margarine.
  3. Combine brown sugar and cinnamon, then sprinkle over the apples.
  4. In a large bowl, sift together flour, sugar, salt, and baking powder.
  5. Add vegetable oil and eggs to the dry ingredients, mixing by hand until smooth; the batter will be thick.
  6. Pour the batter evenly over the apples in the pan.
  7. Sprinkle flaked coconut, chopped pecans, and butterscotch chips evenly over the top.
  8. Bake until the topping is golden brown and the apples are tender, about 45 minutes.
