Ingredients

  • 2 cups quahogs
  • juice from quahogs
  • 1 medium onion
  • 1 (2-inch) square piece salt pork
  • 2 medium potatoes
  • 1 quart milk
  • 1 dollop heavy cream

Instructions

  1. Chop the quahog meat and set aside.
  2. Cut the salt pork into small squares.
  3. Fry the salt pork until golden brown, then remove and set aside.
  4. Add chopped onion to the pork drippings and cook until golden brown.
  5. Chop potatoes and simmer them in milk until tender.
  6. Add the chopped quahogs to the pot and simmer in the salt pork fat and onions.
  7. Add the quahog juice, cooked potatoes, and milk to the mixture.
  8. Heat through and add a dollop of heavy cream.
  9. Serve the chowder with a teaspoon of butter on top. Better the next day.
