Ingredients

  • 15 quail
  • salt
  • 1 (8 1/2 oz.) can green peas
  • 1 recipe of pie crust dough
  • 2 Tbsp butter
  • 4 Tbsp flour

Instructions

  1. Cook the quail until tender in enough water to cover them.
  2. Salt the water to taste and save the liquid.
  3. Remove all meat from the bones of the cooked quail and place it in a greased 9 x 13-inch pan.
  4. Mix 4 tablespoons of flour in 1/2 cup cold water to make a flour paste.
  5. Gradually add the flour paste to the cooled quail broth, stirring constantly.
  6. Cook the mixture until thickened.
  7. Pour the thickened sauce over the quail meat in the pan.
  8. Add the drained green peas.
  9. Roll out the pie crust dough to cover the top of the pan.
  10. Dot the crust with butter.
  11. Bake at 375°F until the crust is golden brown.
