Ingredients

  • 2 C oat bran
  • 1/4 C firmly packed brown sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 C milk
  • 2 Tbsp vegetable oil
  • 2 egg whites
  • 1/4 C honey or molasses

Instructions

  1. Heat oven to 425°F.
  2. Line 12 muffin cups with paper baking cups.
  3. In a large bowl, combine oat bran, brown sugar, baking powder, and salt.
  4. In a separate bowl, whisk together milk, vegetable oil, egg whites, and honey or molasses.
  5. Pour the wet ingredients into the dry ingredients and stir until just combined.
  6. Spoon the batter into the prepared muffin cups.
  7. Bake in the preheated oven for about 15 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
  8. Allow to cool slightly before removing from the muffin tin and serving.
