Ingredients

  • 8 oz. cream cheese, softened
  • 1 egg
  • 2 tsp. baking soda
  • 1 tsp. salt
  • 3 eggs
  • 1/2 to 1 cup. pecans, chopped
  • 1 3/4 cups sugar
  • 2 cups flour
  • 2 tsp. cinnamon
  • 1 cup cooking oil
  • 3 cups chopped apples

Instructions

  1. Combine cream cheese, 1/4 cup sugar, and 1 egg, mixing until well blended. Set aside.
  2. In a separate bowl, combine flour, 1 1/2 cups sugar, baking soda, cinnamon, and salt.
  3. Add oil and eggs to the flour mixture, mixing just until moistened.
  4. Fold in chopped apples and chopped pecans.
  5. Pour batter into a greased baking pan.
  6. Drop spoonfuls of the cream cheese mixture onto the batter and swirl gently.
  7. Bake at 350°F (175°C) for about 50 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow to cool before serving.
