Queso Flameado is a rich, cheesy Mexican dish featuring spicy sausage, tomatoes, and melted Monterey Jack, perfect for sharing as a flavorful appetizer or party snack.

Ingredients

  • 3/4 lb. Mexican sausage (chorizo), casing removed and crumbled
  • 1 small onion, chopped
  • 2 tomatoes, diced
  • 3/4 c. Pace picante sauce
  • 4 c. shredded Monterey Jack cheese
  • avocado slices
  • tomato slices

Instructions

  1. Brown the chorizo in a small skillet; remove to paper towels with a slotted spoon.
  2. Drain all but 1 teaspoon of drippings from the skillet. Add chopped onion; cook until tender.
  3. Return the cooked sausage to the skillet.
  4. Add diced tomatoes and picante sauce; simmer for 15 minutes, or until most of the liquid has evaporated.
  5. In a 9-inch baking dish, arrange 2 cups of shredded Monterey Jack cheese.
  6. Top with the sausage mixture; cover with the remaining cheese.
  7. Bake at 350°F for about 10 minutes, or until the cheese melts.
  8. Garnish with avocado slices and tomato slices.
  9. Serve immediately with warm tortillas or tortilla chips.
