  • 1 pkg. flour tortillas

  • 1 lb. Italian sweet sausage
  • 8 oz. Monterey Jack cheese, grated
  • salsa (Mexican red sauce)

Instructions

  1. Sauté onion, garlic, sweet pepper, and sausage (out of casing and broken up) until browned.
  2. Add black beans to the mixture and cook for a few more minutes.
  3. Grease a 9 x 13 1/2-inch casserole dish.
  4. Take each flour tortilla and add a large spoonful of the sausage and bean mixture. Roll up and place each in the casserole dish next to each other until all tortillas are filled.
  5. Sprinkle grated Monterey Jack cheese over the rolled tortillas.
  6. Pour 2 cups of salsa over the top of the assembled casserole.
  7. Bake in a preheated oven at 350°F (175°C) for 30 minutes.
