Ingredients

  • 1 cup finely grated carrots
  • 3/4 cup uncooked instant rice
  • 2/3 cup shredded Cheddar cheese
  • 1/4 cup chopped onions
  • 1/2 teaspoon dried basil leaves
  • 1 1/2 cups milk
  • 3/4 cup Bisquick baking mix
  • 3 eggs
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. Preheat oven to 400°F.
  2. Grease a 9-inch pie plate with a 1 1/4-inch depth.
  3. Mix finely grated carrots, uncooked instant rice, shredded Cheddar cheese, chopped onions, and dried basil leaves; spread evenly in the prepared pie plate.
  4. In a blender or with a hand beater, beat the remaining ingredients (milk, Bisquick baking mix, eggs, salt, pepper) until smooth, about 15 seconds in a blender or 1 minute with a hand beater.
  5. Pour the mixture into the pie plate over the vegetable and rice mixture.
  6. Bake until a knife inserted between the center and edge comes out clean, approximately 30 to 35 minutes.
  7. Allow to cool for 5 minutes before serving.
